Barbecue sotto il portico

Un camino/barbecue in muratura, con annesso un forno a legna, con la grande cappa inclinata che si alza fino al tetto
realizzato in tavelle di legno, è posizionato in un angolo per occupare poco spazio, e domina l’ampio porticato di
una casa rustica. A diretto contatto con la cucina, per maggiore comodità è corredato comunque da un antico lavello in
pietra per il lavaggio e la preparazione dei cibi.

Intonaco e pietra a vista

La presenza di murature di pietra è frequente nella casa rustica, in quanto il materiale è sempre stato facilmente
reperibile sul posto a un costo molto contenuto. Per questo in molti casi vale la pena di mantenere a vista la pietra (o
almeno una parte di muro, quella più significativa) ma per farlo occorrono alcuni accorgimenti: innanzitutto bisogna
eliminare le parti di malta incoerenti e in distacco, e poi ripristinarle usando malta di calce (con sabbia e acqua) o malta bastarda magra (sempre con calce, sabbia e acqua, ma in diverse proporzioni); la calce infatti, essendo originata dalla cottura di pietre calcaree, si lega meglio alle normali pietre da costruzione. Gli intonaci eventuali saranno sempre a base di calce e sabbia.

Plastering and stone at sight/limestone

Stonewalls can often be found in rural houses, since this material has always been rather cheap and widely
available on location. Therefore it is often worth keeping the stone at sight (or at least the most important section
of a wall). A few devices are however needed in order to do so: first of all, uneven mortar that is peeling off must
be removed and then replaced with mortar (with sand and water) or low water bastard tuck pointing (always
made of lime, sand and water mixed in different quantities); in fact, lime sets better on ordinary building bricks as
it results from limestone firing. Plastering can then be lime and sand
based.

Questa soluzione mostra un barbecue, organizzato sul lato corto del portico, con l’ampia cappa bianca scurita dal fumo e la bocca del fuoco che poggia su un lungo piano di lavoro. Anche in questo caso la rusticità dei muri conserva il fascino antico. La panca in muratura, il lungo tavolo e le sedie in ferro realizzano la zona pranzo.

This solution shows a barbecue on the shorter side of the portico with a large white hood, blackened by the smoke, and the fire mouth laying on a long worktop. Also in this case the country style of walls keeps the ancient charm. The walled bench, the long table and the iron chairs furnish the dining area.

Il fascino e il sapore del barbecue

La cottura alla brace è stata la prima che l’uomo, forse ancora indietro nella sua scala evolutiva, abbia adottato, il primo gradino dopo il cibo crudo: è forse questo fascino ancestrale che ce ne prolunga il piacere fino ai giorni nostri, unitamente alle suggestioni derivanti dalle riunioni tra amici attorno alla griglia che spande nell’aria i suoi stuzzicanti aromi (come ci hanno insegnato molti film e telefilm statunitensi, ma la nostra tradizione delle riunioni accanto al barbecue è contadina e molto più antica). La parola barbecue deriva dall’haitiano “barbacoa” o dal francese “de la barbe à la queue” che stava a significare che gli animali venivano cotti interi “dal muso alla coda”; da lì passò ad indicare sia il metodo di cottura sia l’apparecchio per cuocere. Per il metodo è importante che la brace sia stata accesa qualche tempo prima, abbia perso ogni lingua di fiamma e abbia raggiunto la giusta temperatura con forte irraggiamento termico (che penetra all’interno dei cibi senza bruciarli).
Per l’apparecchio la scelta è molto vasta e va da quelli portatili di ridotte dimensioni, utili per famiglia o per i pic nic, a quelli elettrici, da poter usare anche in interno perché non fanno fiamma o fumo, alle strutture di medio ingombro, complete di base, focolare, griglia e talvolta piano d’appoggio ma senza cappa, utili per chi non ha molto spazio e anche per il terrazzo, fino ai modelli completi di tutto, per chi ha spazio e vuole il meglio.

The charm and flavour of barbecues

Barbecuing was the very first means of cooking adopted by mankind when still far behind in its evolutionary progress. It was the first step after raw food: this ancestral fascination is still affecting us nowadays together with the suggestions originating from gatherings with friends around a barbecue with its appetizing aromas spreading in the air (as seen in many American films and TV serials; however our traditional gatherings around a barbecue have rural origins and are far more ancient). The word barbecue either comes from the Haitian "barbacoa" or from the
French "de la barbe à la queue", which meant that animals were cooked whole from "the snout to the tail". It then also took on the meaning of cooking method as well as identifying the actual cooking tool. As to the cooking method, the barbecue has to be lit some time beforehand, the flames have to die down and the barbecue must reach the right
temperature by means of strong thermal radiance (which penetrates right into the food without burning it).
A wide range of barbecues is available, rangingfrom small portable barbecues, which are suitable for families and
picnics, to electric barbecues, which can also be used indoors as they are flame and smoke free. Slightly
more bulky barbecues are also available, featuring a base, a fire, a grill and a working top with no extractor hood, which are suitable for those who do not have much room available and for balconies as well. Finally, fully equipped barbecues are available to those looking for the best possible barbecue and with plenty of room available.

Non è proprio sotto un portico, ma presenta una stretta tettoia il barbecue della foto sopra, realizzato su una base in muratura e inserito in una struttura in mattoni a vista. Posizionato in un angolo del giardino, è abbellito da un graticciato su cui si avviluppa una pianta rampicante. Un piccolo tavolo in legno funge da piano di lavoro.
E’ uno spazio piccolo, ma affascinante che crea l’atmosfera giusta all’esterno della casa rustica.

It is not really under a portico but it has a tight roof. The barbecue in the above picture is made on a masonry top and inserted into a structure of bricks at sight. It is located in a corner of the garden and embellished by a grille wrapped by a climbing. A small wooden table is used as worktop. It is a tiny space but very charming that creates the right atmosphere outside the farmhouse.
