Preparazione: i piani di lavoro

Anche per quanto riguarda le superfici che si utilizzano come appoggio o per la preparazione dei cibi i materiali stanno cambiando e spesso si tende a comporre insieme piani di natura diversa. Tutto ciò è possibile grazie all’introduzione
di trattamenti e procedure che accrescono la permeabilità e la resistenza degli stessi. Uno dei prediletti rimane sempre e comunque il piano in marmo, per la sua resistenza meccanica e agli acidi e, ovviamente, per l’eleganza che può aggiungere alla zona operativa. Ma sempre più di frequente si sperimentano nuovi abbinamenti e soprattutto materiali non più tradizionali come possono essere le piastrelle, i cotti e la ceramica.

Preparation: worktops

The materials used for food-preparation surfaces are changing, and there is a tendency to create different types of tops. All of this is possible thanks to the introduction of treatments and procedures that increase permeability and strength.
One of the favourites is still the marble top, thanks to its strength and its resistance to acids, not to mention the elegance it can provide to a work area. Yet there is an increasing tendency to experiment with new combinations and materials that go beyond the traditional tiles, terracotta and ceramics.
